What visa they will provide, working or tourist/visit? If working, it takes time for you to accomplish and process all documents before you can leave the country. Go to POEA and they will advise you what are those.

But if tourist/visit visa, just bring all necessary authenticated documents; eg. TOR, Diplomas...etc because that willl be needed in Dubai to apply for a working visa.

Good and you are safe if you leave the country however it takes time as I said before. I advise you should visit the POEA they know better what are the requirements that the Immigration might ask. I think you will undergo some training...I forgot the term.

As far as I know/learned from experiences, the Immigration in the airport will ask only for your Employment Visa, your Sponsor Letter and some questions.
